This Prosciutto Brie & Apple Breakfast Sandwich is a great way to start your day off or to enjoy for a leisurely weekend brunch.

In the fall I am always looking for different ways to use apples. So how about a beautiful croissant breakfast sandwich. It's delicious and easy to prepare too. This can easily be prepared for a Sunday brunch and a wonderful easy entertaining option.

1 fresh large croissant
1 egg poached
brie, thinly sliced
honey crisp apple, thinly sliced
fresh basil leaves
salt & pepper to taste
1. Bring water to boil in a medium size pan. Gently crack egg on side of pan and place in boiling water. Let simmer over medium heat for about 8 to 10 minutes. Remove from pan with a slotted spoon and set aside on a warm plate. Sprinkle with salt & pepper.
2. Meanwhile, cut croissant in half and spread with honey mustard. On bottom half place proscuitto, brie, apple, poached egg, and basil. Top with a drizzle of warm honey and place top on sandwich and serve.
