There are so many ways to do a piece of toast and avocado! A lot of fancy recipes are available, but sometimes you just feel like keeping things really simple. This one is a classic with a twist that won't disappoint!
Crushed avocado on top of wheat berry toast with garlic aïoli, served with red pepper flakes, sea salt, lemon wedge and topped with micro greens and a drizzle of basil oil.
This can be put together with very little effort, just a few simple steps and you have something that is delectably rich and creamy on top of toast.

I've provided some more fancier options for this delicious combo that won't take any more time to prepare, but sometimes you just feel like a classic. I love to entertain, especially in the spring and summer. Keeping things simple is the key to enjoying entertaining. When putting on a brunch this can be a classic way to really impress your guests.
I was inspired by coming up with some different ideas for avocado toasts because I have a weakness for this delectable open faced sandwich. Honestly, I know I have said it before, but I feel like avocado toast is the optimum in healthy food and it so enjoyable. Avocados are known to have a high fat content, but they are considered to be one of those "good fats". As long as you are consuming a balanced diet, these are great fats for a healthy heart with incredible health benefits. One of my favourite things that avocados do is to help keep our skin looking healthy. From what I have been told avocados can slow down the skin aging process. Hey, I'm up for giving it a go and benefit from such a delicious, simple meal in the process.

INGREDIENTS
1 slice of fresh crusty wheat bread
1 avocado smashed
1 tbsp of garlic aioli (there's lots of great options on the market)
red pepper flakes and sea salt to taste
bunch of micro-greens
drizzle of basil oil (see link to basil oil recipe)
squeeze of lemon juice to taste
INSTRUCTIONS
1. Start with some fresh crusty wheat berry bread
2. Brush both sides with some olive oil and place in a pan to toast
3. Spread on some avocado, drizzle with garlic aioli
4. Sprinkle with red pepper flakes and sea salt to taste
5. Top with the micro-greens and drizzle with basil oil to taste
5. Finish with a squeeze of lemon juice to taste
