Spring is the perfect time to indulge in light beautiful flavourful desserts.  What better then the combination of blackberries and lavender cream.



Strawberry shortcake in June, Blueberry shortcake in July, why not Blackberry shortcake in April!  A beautiful light airy dessert that is so perfect for Easter weekend.  I love any type of shortcake and this just takes me back to my childhood, but with a bit of a twist.  Place these beautiful plump blackberries and light airy lavender cream on top of one of our beautiful fluffy sweet original buttery scones and you have the makings of a fantastic spring dessert. Blackberry Lavender Cream Shortcakes on Fluffy Buttery Urban Baker Co. Sweet Original Buttery Scones

prep time | 20 minutes 
total time | 20 minutes 
servings | 4 servings 

INGREDIENTS

Lavender Cream:

2 cups whipping cream

2 lavender tea bags

4 tsp powdered sugar


Blackberry Shortcakes: 

4 Urban Baker Co. Classic Original Scones

2 cups Lavender Cream

2 cups fresh blackberries

2 tsp powdered sugar


INSTRUCTIONS

1. In a small saucepan, combine the cream and lavender tea bags. Bring to a very light simmer and remove from heat. Let steep for five minutes. Remove tea bags, then refrigerate the cream until completely chilled.


2. In the bowl of a standing mixer with the whisk attachment, beat the cream on medium-high until it begins to thicken. Add powdered sugar, then continue to beat until soft peaks form.


3. Take one cup of the blackberries and mash with a masher.  Add the powdered sugar and stir until combined.  Mix in the remaining whole blackberries.


4. Cut the Urban Baker Co. Sweet Original Buttery Scones in half, place a spoonful of the blackberry mixture on each one, top with lavender cream, top with the other scone half and top with a dollop of the cream and a spoonful of blackberries.  Serve immediately.
