We have a few more summer weekends, so let's enjoy it while we can! Here's a Caribbean Grilled Chicken with a Lime Mango Salsa and a Basil Corn Salad to kick it off right!

Caribbean Grilled Chicken with Lime Mango Salsa & Basil Corn Salad
Perfect summer food!

prep time | 45 minutes 
total time | 60 minutes 
servings | 4 people

INGREDIENTS

4 boneless chicken breasts

2 Tbsp grape seed oil

1/4 to 1/2 tsp chilli powder - to taste

2 tsp smoked paprika

2 tsp ground cumin

2 tsp garlic powder

salt and pepper to taste


Basil Corn Salad:

2 cups of frozen corn cooked or 4 ears of corn husked

2 peaches cored & thinly sliced

2 Tbsps olive oil

1/4 cup basil finely chopped

2 tsp fresh oregano finely chopped

1 lemon (zest & juice)

1/2 lime (juiced)


Lime Mango Salsa:

2 mangoes peeled and chopped

1 lime (zest & juice)

1/4 cup basil finely chopped


INSTRUCTIONS

1. Heat grill to 400 degrees


2. Place chicken breasts in plastic bag with grape seed oil and spices.  Seal bag and shake until chicken is evenly coated with the spices.  Place in fridge to marinate.


3. Cook corn according to directions if frozen or if using ears of corn, cook in a pot of boiling salted water for 7 minutes.  Remove from pot, let cool and remove from ear.  Set aside.


4. Combine Basil Corn Salad ingredients together in a bowl and add corn.  Stir to combine and place in serving bowl.


5. Combine Lime Mango Salsa ingredients together in small bowl.  Place in serving bowl.


6. Place marinated chicken breasts on grill for 10 to 12 minutes and cook until internal temperature reaches 160 degrees.  


7. Place Caribbean Grilled Chicken on serving platter and serve with Lime Mango Salsa & Basil Corn Salad.
