This Thai Basil Chicken is an easy week night meal that hopefully will give you some variety for you and your family. This is not only easy but healthy too. 


Chicken, peppers and onions are sauteed and then cooked in a sweet basil sauce. Serve this over brown or white rice and you have an simple fast 30 minute meal. 


As we all get back into the routine of school and work easy week night meals are key. Sometimes it's challenging to come up with ideas and we tend to make the same thing multiple times because we are comfortable with it. Thai Basil Chicken Stir Fry
The perfect easy weeknight meal

prep time | 20 minutes 
total time | 35 minutes 
servings | 4 people

INGREDIENTS

2 Tbsps sesame oil

4 boneless chicken breasts, sliced thinly

black pepper

4 cloves of garlic minced

1 tsp ground ginger

1 red and 1 yellow bell pepper, seeded and thinly sliced

1 sweet onion peeled and thinly sliced

1/2 cup low sodium soy sauce

1/4 cup honey

1/2 tsp chilli powder

1/4 cup fresh basil finely chopped

white or brown rice steamed for serving


INSTRUCTIONS

1. Set oil in a large skillet or wok over medium heat.  Add the chicken and season with black pepper.  Brown the chicken turning as it cooks, about 3 to 4 minutes.  Add the garlic, ginger, bell peppers, onions for an additional 2 to 3 minutes.  


2. Pour in the soy sauce, chilli powder and honey and bring the sauce to a boil over medium heat, cooking an additional 5 minutes.


3.  Remove from the heat and place on a bed of rice.  Top with basil and serve.
